PRODUCTION METHOD

ENSEMBLE: A blend of two methods.

Method I — Tequila Blanco Traditional (93% of our Ensemble)

  • Cooking: Stone & brick masonry oven, heated with steam injection. 24 hour cooking and 24 hour rest.
  • Maceration: Stainless steel roller mill.
  • Fermentation: Open-air, spontaneous, 3–4 days, stainless steel vats.
  • Distillation: Stainless steel still heated by steam.

Method II — Tequila Blanco Ancestral (7% of our Ensemble)

  • Cooking: Adobe and stone dome oven fired with pine and sacred fir wood. 72 hour cooking.
  • Maceration: Hand-mashing with wooden mallets in a wooden tree trunk.
  • Fermentation: Open-air, spontaneous, 3–4 days, wooden barrels.
  • Distillation: Filipino Copper pot stills heated directly by firewood.
