PRODUCTION METHOD

93% Tequila Blanco Traditional

Cooking: Autoclave masonry oven, heated with steam injection. 24 hour cooking and 24 hour rest.
Maceration: Stainless steel mill.
Fermentation: Open-air, spontaneous, 3–4 days, stainless steel vats.
Distillation: Stainless Steel Still heated by steam.

7% Tequila Blanco Ancestral

Cooking: Adobe and stone oven fired with pine and sacred fir wood. 72 hour cooking.
Maceration: Hand-mashing in wooden tree trunks.
Fermentation: Open-air, spontaneous, 3–4 days, wooden barrels.
Distillation: Copper Pot Stills heated directly by firewood.

THE DISTILLERY

For four generations, the 'Real' family of Tequila Selecto de Amatitán (NOM 1459) has poured their heart into tequila, carrying forward a legacy born in 1942. Their distillery rests in Amatitán, Jalisco, in Los Valles or the Lowlands, in a town that's widely regarded as the birthplace of tequila. CASA J is honored to collaborate with Tequila Selecto de Amatitán to craft one of the distillery’s first expressions using the ancestral method of tequila production.

TASTING NOTES

A sensorial expression of tiempo y tierra, CASA J Tequila Blanco Ensemble offers notes of fresh citrus, green apple, caramelized agave, hints of fresh rosemary, and nuances of succulent pineapple.

The tequila is best experienced neat at room temperature, yet remains equally captivating in cocktails.
